Vegetable Biryani
Our Mauritian Biryani (or Briyani as we pronounce it in Mauritius!) is much closer to the Hyderabadi Biryani style of cooking (originating from South India). The rice is layered with the spices, marinated vegetables, golden fried caramelized onion, ghee, garlic, ginger, fresh coriander, fresh mint, potatoes, vegetables, premium saffron and more ingredients. The end result, of our biryanis, is not very ‘ghee’ rich, as the different spices used do all the talking!
Back in the day, this dish was considered a royal dish for Nawabs (Nobles) and Nizams (Governors or Administrators). Nowadays, biryanis maintain a worldwide reputation as is a lavish treat usually served for celebrations and festivities! It continues to be one of THE most aromatic and savoury middle-eastern dishes, whether it is non-vegeterian or vegeterian!
The typical vegetables found in a vegetarian Mauritian biryani are potatoes, carrots, string beans, cabbage, and peas.
