Pickled Vegetables (Achard Légume)

A recipe that has been passed down from Malini’s great-grandmother! The taste, the crunch, the flavour… it’s all beyond incredible!

Made with fresh vegetables (green beans, carrots and cabbage) infused and soaked with a blend of spices which is why it’s called Pickled Vegetables! It is an AMAZING, light, tropical, crunchy dish… really popular and a favourite with the locals in Mauritius and also in La Reunion Island (off the coast of Madagascar, south-west of Mauritius in the Indian Ocean).

Archard Légume is served as a side to many rice dishes but also eaten in bread (as a sandwich). Very healthy and truly incredibly tasty!
