*OUR STAR DISH* Chicken Biryani

A Biryani is one of THE most aromatic and savoury middle-eastern dishes! 

Back in the day, this was considered a royal dish for Nawabs (Nobles) and Nizams (Governors or Administrators). Nowadays, biryanis continue to maintain a worldwide reputation as a LAVISH dish usually served for celebrations and festivities! Expensive to make because of the extensive list of ingredients used in it, but it is absolutely worth every effort and expense just to be able to share with everyone here in Nova Scotia!

Mauritian Biryanis (or Briyanis as we pronounce it in Mauritius!) is much closer to the Hyderabadi Biryani style of cooking (originating from South India).

For non-vegetarian biryanis, the main ingredient that accompanies the spices is the meat and it can be chicken or mutton, often the most commonly used meat for cooking a biryani, however beef and fish biryanis are also common in Mauritius as well as vegetable biryani for vegeterians. The rice is layered with the spice and yogurt marinated chicken, golden fried caramelized onion, ghee, garlic, ginger, fresh coriander, fresh mint, potatoes, vegetables, premium saffron and more ingredients. The end result, of our biryanis, is not very ‘ghee’ rich, as the different spices used do all the talking!
