A recipe that has been passed down from Malini's great-grandmother! The taste, the crunch, the flavour... it's all beyond incredible! Made with fresh vegetables (green beans, carrots and cabbage) infused and soaked with a blend of spices which is why it's called Pickled Vegetables! Potato & Eggplant Fricassée

A fricassée is halfway between a saute and a stew. This Mauritian Potato & Eggplant Fricassée is an amazing side dish made of potato, eggplants, onions, tomatoes, herbs and spices and allowed to stew. The result is out of this world! "Satini coco", which translates as Coconut Chutney in english, is widely used as an accompaniment to many dishes, especially curries and rice. This Coconut Chutney is one of the most versatile chutneys and is a very popular accompaniment in Mauritius. It is made up of coconut, fresh mint, tamarind, garlic and other wonderful ingredients, and when combined showcases an amazing exotic chutney. Recommended with all mains on this week's menu.
