Sausage Rougaille (Pork)

Rougaille is a typical ‘Mauritian Creole’ sauce using tomatoes, onions, garlic, thyme and chillies. The beautiful flavoured sausages are then allowed to gently stew in that tomato-based sauce turning into something divine. This is an INCREDIBLE dish and we are thrilled to be able to offer the Sausage Rougaille (aka. "Rougaille Saucisse" in Mauritius) to everyone here in NS! Rougaille is typically eaten with rice or even fresh bread (amazing with a fresh french baguette), accompanied with different salads or sides.
